rooster Real Food, Naturally: Flu Update

Good news comes from scientists in Holland and Japan simultaneously on the possibility of a flu pandemic - they think it is unlikely from the current strain.

The form of avian flu which is causing all of the concern is a known form catalogued as H5N1. This version is known to be found in the lower lung cavity, and was first identified in the 1950's. Consequently, the mechanics of its ability to infect from human to human is believed to be difficult. We spread viruses from human to human by the sneeze or cough, and this strain burrows so deep in the lungs that it is not expelled through this reflex. Bird to human infection seems likely only in people who are consistently exposed to infected flocks, such as those that sleep in close proximity to an infected flock.

Peter Palese, a virologist at Mt. Sinai, says he "feels strongly that H5...is not the virus which is likely to be the next pandemic."

Let us hope that he is right. In the meantime, continue to bolster your immunities with fresh, nutritious foods from your local farmers and food artisans at your nearby farmers market. It's "thousands of miles fresher".


Seed Cheese Cabbage Rolls
  • 1 1⁄4 cup finely grated carrots
  • 1/3 cup thinly sliced red bell pepper
  • 1 garlic clove pressed
  • 1 tsp minced green onion
  • 1⁄2 tsp dill
  • 1 tsp Namo Shoyu
  • 1⁄4 tsp lemon zest
  • Dream Cream (recipe below)
  • Green cabbage leaves – left out for several hours to wilt

Mix ingredients into Dream Cream and spoon 1⁄4 cup into cabbage leaf.  Remove the core if cabbage is tough.

Dream Cream:

  • 1/3 cup raw macadamia nuts
  • 2/3 cup pine nuts
  • 1⁄2 cup almonds
  • 1 cup filtered water
  • 1⁄2 tsp fresh squeezed lemon juice
