market vegetables Market Vendor Bio: Nancy's Naturally

After many years in the airline industry here in Houston and the Washington, D.C. area, and several years in the managed mental healthcare field,  when Nancy found  herself "downsized" from a corporate position, she a did weekend transformational course called the Forum.

In her own words: "It changed my life and gave me the courage to start my own business."

Nancy's Naturally Personal Cooking and Catering was born from that in 1997.  I kept a part-time corporate job, did some catering and trained to become a yoga instructor.  I built my yoga business, phased out of the catering.  Thanks to Joan Gunderman, I connected with Pat Greer and Central City Co-op and changed my whole way of eating.  About that some time I was introduced to the Last Organic Outpost and discovered a passion for sustainable gardening.  The Last Organic Outpost is a beautiful agricultural park in the heart of downtown Houston, with a specialty of growing salad mixes of heirloom lettuces and herbs. Nancy's Naturally Vitality Salad Dressing became the favored compliment to the Last Organic Outpost Salad Mix.

First friends begged me to make some for them, and then suggested I ought to sell it, but when Pat Greer offered me the opportunity to sell my signature Vitality Salad Dressing at the Central City Co-op, we were on the way!  Then Susan Cobb and Portia Leyendecker visited the Last Organic Outpost and invited  us to bring salad mix and dressing to the new Houston Farmers Market behind the Onion Creek Coffeehouse.  From the start, it's been a hit.

Today, I enjoy many repeat customers and love hearing all the different recipes people are using it for, like dipping sauce for bread, marinades for fish and chicken.  I'm a raw foodist and vegetarian, so my favorite recipe is to simply marinade garden fresh kale (torn from the stems into bite size pieces) in several tablespoons for Nancy's Naturally Vitality Dressing.  Let it sit several hours, or overnight for best flavor.  Voila - one of the easiest salads and most nutritious ways to eat kale. Kale is a high protein green super rich in sulphur-residues important for fat digestion!    


Curried Kohlrabi and Jicama
  • shred, spiralize or julienne kohlrabi and jicama
  • fresh squeezed orange juice
  • curry powder
  • fresh spinach

Mix kohlrabi, jicama, orange juice and curry powder and let marinate for several hours. Serve over a bed of fresh spinach.
